The times are the same for Royal, Classique and Daily. Both start from a chilled bun, straight from the fridge.

How to microwave GoBao

  1. Take one bun out of the fridge and place it on a microwave-safe plate.
  2. Cover it with a damp paper towel. This keeps the dough soft instead of dry.
  3. Microwave for 60–90 seconds.
  4. Let it rest for 20 seconds before eating. The filling is very hot right out of the microwave.

Microwaves vary in power. If the centre is not hot after resting, heat it a little longer.

How to steam GoBao

  1. Bring the water in your steamer to a boil.
  2. Place the buns in the steamer basket with a little space between them, and cover with the lid.
  3. Steam for 3–5 minutes, counted from when the water is boiling.
  4. Lift the lid away from you and take the buns out carefully. The steam and the filling are hot.

No steamer?

Any setup that holds the bun above boiling water under a lid works the same way: a metal sieve or a rack over a pot, with the lid on. Put a piece of parchment paper under the bun so it does not stick. The time stays at 3–5 minutes.

Heating from frozen

If you froze your GoBao, thaw it first. Move it to the fridge for about 5 to 6 hours, then heat it exactly as above: 60–90 seconds in the microwave or 3–5 minutes in the steamer.

Do not heat GoBao straight from frozen. The outside heats up long before the centre does.

Microwave or steaming: which one?

Steaming gives the softest, fluffiest dough and is the closest to a bun fresh from the steamer. Choose it when you have a stove and ten minutes.

The microwave is the fast option for work, school or a quick snack. The damp paper towel is what keeps the dough from drying out, so do not skip it.

Methods we do not recommend

A steamed bun should stay soft outside and hot inside. These methods work against that:

  • Oven: dries the dough and crisps the outside before the centre is hot.
  • Air fryer: turns the soft dough into a crust.
  • Pan-frying: gives you a fried bun, which is a different food.
  • Grilling: burns the outside while the filling is still cold.

Common mistakes

  • Skipping the damp paper towel in the microwave. The dough turns dry and tough.
  • Heating straight from frozen. Thaw in the fridge first.
  • Biting in right away. Give it 20 seconds. The filling holds a lot of heat.
  • Starting the timer too early when steaming. The 3–5 minutes begin when the water is boiling.
